Lindsey's Favorite Recipe

Hello friends!
Today I am sharing a recipe for one of my favorite foods ever!
Rum Fudge.


I absolutely love the smell and taste of rum extract. It's so yummy!
This recipe originally started out as a frosting recipe, but it is the most difficult frosting to make! There is a very fine line between pouring the frosting on a cake when it's not too hot for the cake but not to stiff that it won't spread, so Mom (Twyla) came up with the brilliant idea to make it into a fudge!
It will make a small batch of fudge and you're welcome to double it if you want.
I love that it only takes 4 ingredients!


Rum Fudge

1 stick of butter
2 cups of sugar
2/3 cup of evaporated milk
3 tsp of rum extract

Boil butter, sugar and evaporated milk till your candy thermometer reaches 240 (just above soft ball stage) Take off heat and stir in rum extract.
Butter a a 9 x 5 loaf pan and pour in the fudge mixture and let set.
Cut into squares and serve.


If you would like to try it as a frosting, boil only until soft ball stage. Keep stirring the mixture after you take it off the heat to keep it smooth until it is cool enough to spread on cake. We like it on chocolate cake!


These are not as soft and creamy as typical fudge. It has a rich, sugary taste that will keep you craving it until the whole batch is gone!

Oh man! This sounds delish! Have piece for me! We can't get rum extract here and although I have some, I don't think I have 3 tsps left. :/ I usually make regular fudge this time of year but there are no chocolate chips in any of the grocery stores either.
